Sheet Pan Garlic Parmesan Chicken Thighs with Vegetables

This sheet pan garlic Parmesan chicken recipe is an easy dinner made with tender chicken thighs, crispy potatoes, and fresh green beans. Everything cooks together on one pan with a flavorful garlic Parmesan coating, making this a simple weeknight meal with minimal cleanup.

Sheet pan dinners are one of my favorite ways to get a flavorful family dinner on the table without much hands-on cooking.

Ingredients for sheet pan garlic Parmesan chicken thighs

To make this easy sheet pan recipe, you’ll need the following ingredients:

For the marinade

  • 6 chicken thighs (with skin and bone)
  • Juice of ½ lemon
  • 2 cloves of garlic, minced
  • 1 tablespoon of fresh parsley, chopped
  • Sea salt and cracked black pepper, to taste
  • 1 pound of baby potatoes, quartered
  • 1 pound of green beans, trimmed

For the coating

For the sauce:

  • 4 tablespoons of unsalted butter
  • 1 large clove of garlic
  • A dash of sea salt

You’ll also need a large baking sheet and some parchment paper.

How to make sheet pan garlic Parmesan chicken thighs

Tonight’s one pan meal features chicken thighs, baby potatoes, and green beans, but you could also substitute broccoli or asparagus and even thinly sliced carrots for the green beans.  All would work well.

I also chose to use bone-in chicken thighs with skin on. They are very succulent, and the dark meat adds extra flavor to the meal.

The recipe is very easy to prepare. The only hands-on part of the recipe is breading the chicken and then adding the green beans a bit later. 

Prep steps

  • Preheat the oven to 400ºF (200°C).
  • Line a baking sheet with parchment paper.

Preparing the coating ingredients

I like to use fresh herbs for both the egg mixture and the crumb coating. They add loads of flavor, and the Panko bread crumbs are very light and make a really crispy coating when it is cooked.

  • In a bowl, combine the egg, lemon juice, 2 cloves of minced garlic, 1 tablespoon of chopped parsley, sea salt, and cracked black pepper.
  • On a plate, combine the Panko bread crumbs, 1 tablespoon of chopped fresh parsley, and the grated Parmesan cheese.

Bake the chicken and potatoes

  • Combine the butter with garlic and salt and pepper to taste.
  • Dip the chicken thighs into the egg mixture and roll in the Panko mixture.
  • Place the chicken in the middle of the baking sheet.
  • Arrange the baby potatoes around the chicken.
  • Pour 2 tablespoons of the butter mixture over the potatoes and 1 tablespoon of butter over the chicken. (Save the last tablespoon for the beans).
  • Bake in the preheated oven for 30 minutes.

Add the beans

  • Remove the pan and place the green beans on the baking sheet.
  • Pour over the remaining butter mixture, and cook for another 10 minutes.

Browning the chicken

  • Turn the oven to broil.
  • Cook for a final 5-10 minutes with the door of the oven slightly open.
  • The meal is ready when the chicken is nicely browned, and the vegetables are tender.

Serve by placing one chicken thigh on each plate, along with a helping of the potatoes and green beans.

The flavor of this roasted garlic Parmesan chicken is amazing. I am not fond of a recipe where the lemon takes over the taste.  Using just half a lemon in the marinade gives the meal just a hint of citrus but not too much.
