Banana Nut Breakfast Bars – Healthy Grab and Go Slices

This recipe for banana nut breakfast bars gives you the homemade taste of banana muffins but in a tasty bar recipe instead.

If you are looking for a quick, on the go breakfast recipe that you can grab on a busy week morning, this recipe is perfect.

If you have ripe bananas in my fruit bowl, you can put them to good use in this easy recipe. There are lots of uses for ripe bananas, but one of my favorite ways to use them is in some type of muffin, bread or bar.

Let’s make some banana nut breakfast bars

The bars are incredibly easy to make. Just combine the dry ingredients in one bowl, the wet in another and then blend them all together and bake in a preheated oven set at 375°F (190°C).

Dry IngredientsCombine the flour, salt, baking soda, cinnamon, brown sugar, oatmeal and nuts in one bowl.

wet ingredientsCombine the eggs, mashed bananas, cinnamon and vanilla extract in another bowl.

Dry and wet ingredients mixed togetherMix the dry and wet ingredients together and blend well, being sure to get all the flour mixed in.

Banana nut bar mix ready to bake.Place the ingredients in a greased and floured 9 x 13″ pan and cook for 25-30 minutes in your preheated oven set to 375ºF (190°C).  Cool completely and cut into bars.

Banana Nut Breakfast Bars

This recipe for banana nut breakfast bars gives you the homemade taste of banana muffins but in a tasty bar recipe instead.

Total Time 35 minutes

Ingredients

  • 1 ½ cups all purpose flour
  • ½ teaspoon kosher salt
  • ½ teaspoon baking soda
  • 1 teaspoon cinnamon
  • ¾ cups brown sugar
  • 2 cups rolled oats
  • ¾ cup chopped walnuts
  • 2 eggs
  • ¾ cups unsweetened apple sauce
  • 3 medium bananas (mashed)
  • 1 teaspoon pure vanilla extract

Instructions

  1. Preheat the oven to 375ºF (190ºC).
  2. Mix all of the dry ingredients together in a large mixing bowl. Stir to combine well.
  3. Combine all the wet ingredients in another mixing bowl.
  4. Mix the dry and wet ingredients and stir until every thing is combined together.
  5. Grease a 9"x13" pan. Pour the banana nut mix into the pan and spread evenly.
  6. Bake in a preheated 375ºF (190ºC) oven until golden brown - about 25-30 minutes.
  7. Cool completely and then cut into bars.
  8. Store in an airtight container.
