Roasted Cabbage Wedges Recipe with Parmesan Garlic Butter

If you’ve never made oven roasted cabbage wedges, you are in for a treat. This side dish recipe is easy to make and ready in about 45 minutes. 

When eaten plain, cabbage has a crunchy texture and tart flavor. This recipe yields cabbage with a sweeter flavor that is soft in the center with crispy edges.

The cabbage is seasoned with garlic butter and topped with Parmesan cheese. It’s a tasty way to incorporate more vegetables into your meals.

Ingredients for oven roasted cabbage wedges

To make this easy cabbage recipe, you’ll need the following ingredients:

Cabbage wedges with lemon, parsley, salt, pepper, Parmesan cheese, butter and onion powder on a marble counter.

  • ½ of a medium cabbage, cut into 4 wedges
  • Cooking spray
  • 5 tablespoons of unsalted butter
  • 4 cloves of garlic, minced
  • ¼ teaspoon of sea salt
  • ¼ teaspoon of cracked black pepper
  • ½ teaspoon of onion powder
  • ½ cup of fresh Parmesan cheese, grated
  • Chopped parsley and lemon wedges, to garnish

You’ll also need an ovenproof baking dish, a silicone basting brush, and a garlic press.

How to roast cabbage

Preheat the oven to 375°F (190°C). Spray the bottom of a 13×9-inch ovenproof baking dish.

This Parmesan roast cabbage recipe only calls for a half head of cabbage. If your cabbage is whole, cut it in half. Make sure to slice through the top of the cabbage, down through the core.

Place you cabbage cut side down, with the core facing you. Cut it into four wedges that are approximately the same size, making sure that each wedge has a piece of the core.

It’s important that each wedge has a section of core in it, so that the wedges will stay in tact.

Melt the butter in the microwave for about 40 seconds.

Mince the garlic, with your garlic press, and add it to the butter.

Stir the salt, pepper, and onion powder into the garlic butter. Mix well.

Brush the garlic butter over the top, sides, and bottom of each of the cabbage wedges.

Coat the cabbage with Parmesan cheese, pressing the grated Parmesan on all sides of the cabbage wedges. Then place them in the baking dish.

Bake the cabbage wedges in a preheated oven for 40 minutes until the cheese is melted and the edges of the cabbage are brown and slightly crisp.

Remove the Parmesan garlic roasted cabbage wedges from the oven and transfer to a serving platter. Drizzle any garlic butter that is left in the roasting pan over the wedges of cabbage.

Garnish the cabbage wedges with fresh parsley and more grated Parmesan cheese.

  6. Stir the salt, pepper, and onion powder into the garlic butter. Mix well.
  7. Brush the garlic butter over the top, sides, and bottom of the cabbage wedges.
  8. Coat all sides of the cabbage wedges with Parmesan cheese, pressing the cheese in slightly.
  9. Bake the cabbage wedges in the preheated oven for 40 minutes until the cheese is melted and the edges of the cabbage are brown and slightly crisp.
  10. Remove the Parmesan garlic roasted cabbage wedges from the oven and transfer to a serving platter.
  11. Drizzle with any remaining garlic butter from the pan on top of the cabbage wedges.
  12. Garnish with a sprinkle of Parmesan cheese and chopped fresh parsley.
  13. Serve with lemon slices. Enjoy!
