This recipe for Brussels sprouts with bacon and almonds makes a delicious side dish

Cooking the sprouts in chicken broth takes away the bitterness that these Brussels sprouts sometimes have.

Bacon adds a nice flavor to the dish and almonds give some texture that many vegetable dishes lack.

Sauteed Brussels Sprouts with Bacon

Add a ton of flavor to your Brussels sprouts by cooking them with almonds and bacon.

Ingredients

  • 3 slices bacon, chopped
  • 3 tbsp slivered almonds
  • 1 tablespoon extra-virgin olive oil
  • 2 Spring onions, chopped
  • 1 1/2 pounds Brussels sprouts, trimmed (the large ones should be cut in half.)
  • Kosher Salt
  • Cracked black pepper
  • 1 cup chicken broth

Instructions

  1. Cook the bacon in a 400º oven for 10 minutes.
  2. Remove bacon to a paper towel lined plate.
  3. In a pan on the stove top add the extra-virgin olive oil and heat.
  4. Add the spring onions to the pan and saute 1 to 2 minutes.
  5. Toast the almonds over medium heat just until they start to become fragrant and remove. Set aside.
  6. Stir in the Brussels spouts and coat in the oil. Season with Kosher salt and cracked black pepper.
  7. Cook Brussels sprouts 2 to 3 minutes to begin to soften, then add the chicken broth.
  8. Bring broth to a bubble, cover and reduce heat to medium low.
  9. Cook for 10 minutes, until tender.
  10. Transfer sprouts to a serving dish.
  11. Stir in the silvered onions and top with cooked bacon bits.
