Coconut Crusted French Toast

This coconut crusted French toast makes breakfast special! For you busy cooks – this is one of my most cherished 30 minute meals.

For weeks, when my husband and I go out for breakfast on Sunday morning, I have been saying that I should make French toast at home. And I am so glad I did – and you will be when you try this recipe!

This French toast is super easy to make but tastes like you spent hours making it. It is so delicate in flavor and really satisfying. Keep reading for to learn how to make it.

Ingredients for this coconut crusted French toast

To make this French toast recipe you’ll need the follow ingredients:

  • 12 eggs
  • 1 ¼ cups of milk
  • 2 teaspoons of granulated sugar
  • 1 teaspoon of ground cinnamon
  • ½ teaspoon of pure vanilla extract
  • 14 slices of white French bread
  • 7 ounces of flaked coconut
  • Pure maple syrup

The key to this recipe is the coconut, it adds both flavor and a lot of texture to the recipe. Coconut takes ordinary French toast into a fine dining experiment. It’s super easy to make, too. 

Coconut is such a versatile product. You can use the water or flesh and make both coconut cream and butter from the flesh, too.

How to make this coconut crusted French toast recipe 

Start by preheating your oven to 475ºF (240ºC).

While the oven is preheating, prepare your baking sheet. You can either grease the baking sheet or line it with a silicone baking sheet or a sheet of parchment paper.

I used my silicone baking mat for easy clean up later. I can’t get enough of silicone products. They make life in the kitchen so much easier!

In a large bowl, combine the eggs, milk, sugar, cinnamon, and vanilla extract. Whisk this mixture until smooth to create an egg wash.

Place the pieces of bread in the egg wash, a few at a time and let them sit for about a minute. Roll them in the flaked coconut and place on the baking sheet.

When I made this recipe, some of the slices of bread soaked up the cinnamon well and some didn’t. To make sure all the slices were even, I poured the extra egg wash over the pieces that did not get as much and also sprinkled the extra coconut on top too.

Put the slices of coconut crusted French toast on your prepared baking sheet and bake in the oven for 5 minutes on each side.

Bake in the preheated oven for 5 minutes on each side.

Add some pure maple syrup, and fresh fruit and you are done.
