California Cobb Salad with Ranch Dressing (Whole30 – Paleo – Gluten Free)

This delightful California Cobb Salad is not only delicious, but it also fits into the Whole30 and Paleo diets. It’s time for some California Dreaming – Cobb salad style. 

Cobb salads are my go-to choice when I eat out for lunch and want to have a great taste but still keep the meal fairly healthy. Today we are going to make one at home!

This salad is a wonderful blend of mixed greens, grilled and seasoned chicken breast, with bacon, eggs, and vegetables. It also has a Whole30-approved homemade creamy ranch dressing.

  • 1 cup of romaine lettuce, chopped
  • 2 cups of baby salad greens
  • 3-4 ounces chicken breasts, seasoned and grilled
  • 2 strips of Whole30 compliant bacon, cooked crisp and chopped
  • Baby tomatoes
  • Baby cucumber, sliced
  • 1 hard-boiled egg, peeled and quartered lengthwise
  • ½ avocado, peeled and chopped
  • 2 tablespoons Whole30 Ranch Dressing
  • Fresh parsley or cilantro to garnish

Tips for making sure this salad is Whole30 compliant

Most of the ingredients in a traditional California Cobb Salad are perfectly fine to eat on the Whole30 diet plan, as is. However there are a couple of things to keep in mind:

  • The main consideration is to cook your own chicken since most rotisserie-style chickens are off-limit on Whole30.
  • Be sure to check the label on the bacon that you use to make sure it is compliant (no sugar, no sulfites).
  • It’s safest to make your own dressing for this Whole30 California Cobb salad. Most commercial dressings are a not compliant since they contain sugar or soy products. See my Whole30 Ranch dressing for a great-tasting topping for this salad.

How to make this (Whole30) California Cobb Salad

Start by placing your Romaine lettuce at the base of a large salad bowl.

Add lettuce to the bowl.

Many Cobb salad recipes use only this type of lettuce but I like to add to it since I’ll be omitting some other flavors. Top it with the baby mixed greens and add the sliced baby cucumbers and tomatoes.Add mixed greens and salad veg

Work from one side of the bowl to the other to arrange the cooked chicken slices, quartered hard-boiled eggs, slices of avocado, and pieces of cooked crumbled bacon.

Layer the topping from one side to the other

Top the salad with the Whole30 ranch dressing and garnish with some fresh chopped parsley or cilantro.

Ingredients

  • 1 cup of romaine lettuce, chopped
  • 2 cups of baby salad greens
  • 3-4 ounces chicken breasts, seasoned and grilled
  • 2 strips of bacon, cooked crisp and chopped
  • Baby tomatoes
  • Baby cucumber, sliced
  • 1 hard-boiled egg, peeled and quartered lengthwise
  • ½ avocado, peeled and chopped
  • 2 tablespoons Whole30 Ranch Dressing (see recipe here)
  • Fresh parsley or cilantro to garnish

Instructions

  1. Add the romaine lettuce and mixed greens to a large salad bowl.
  2. Put the tomatoes and baby cucumbers on top of the greens.
  3. Work from one side of the bowl to the other, placing the chicken breast slices, quartered egg, baby pieces and slices of avocado until the top is covered.
  4. Top with the ranch dressing and sprinkle with parsley or cilantro.
  5. Makes one very large and hearty salad.
