Ingredients for the healthy turkey meatloaf recipe
To make this turkey veggie meatloaf recipe, you’ll need the following ingredients:
- 1 tablespoon of olive oil
- 1 medium onion
- 1 sweet bell pepper (any color)
- 3 cloves of garlic
- ½ cup of reduced-fat cheddar cheese
- ¼ cup of Panko breadcrumbs
- 1 tablespoon of fresh basil
- 1 tablespoon of fresh oregano
- 1 tablespoon of fresh parsley
- 1 teaspoon of fresh thyme
- ½ teaspoon of salt
- ½ teaspoon of cracked black pepper
- 1 large egg
- 1 pound of 99% lean ground turkey breast
- ½ cup plus 1 tablespoon of ketchup, divided
- 1 tablespoon of light brown sugar, unpacked
- 1 tablespoon of mustard
You’ll also need cooking spray and a 9 x 5-inch loaf pan.
How to make the turkey meatloaf with veggies recipe
Start by preheating the oven to 350°F (180°C). Spray a 9 x 5-inch loaf pan with cookie spray.
Using a pair of herb scissors or a sharp knife, finely chop the fresh herbs. Set them aside for later.
Dice the onion and sweet bell pepper. Peel the garlic and dice it finely.
Heat the olive oil in a non-stick skillet over medium-high heat. Add the onions and sweet bell pepper. Sauté for 2 minutes, until the vegetables have just started to soften.
Stir in the diced garlic and cook for another minute.
The vegetables don’t need to be completely cooked, since they will continue to cook as they bake in the oven with the ground turkey.
Remove the onion mixture from the heat and set it aside to cool.
In a large bowl, combine the cooled onion mixture with the reduced-fat cheese, Panko breadcrumbs, egg, 1 tablespoon of ketchup, chopped fresh herbs, salt, and pepper. Stir well.
Add the lean ground turkey breast and stir until the ground turkey is combined. Don’t stir it too much, or the turkey will turn to mush!
Put the mixture into the prepared loaf pan and smooth the top of the turkey meatloaf with a spatula.
Put the pan in the preheated oven and bake for 35 minutes.
While the turkey meatloaf is baking, prepare the ketchup topping. You can make extra sauce, if you like; it is easy to prepare and tastes delicious when spooned over the meatloaf slices.
In a small bowl, combine ½ cup of ketchup with the brown sugar and mustard. Stir well to combine.
Remove the turkey meatloaf from the oven and spread the ketchup topping over it.
Return it to the oven to continue baking for an additional 10 to 15 minutes, or until the meatloaf reaches an internal temperature of 165°F (75°C).
Remove the turkey meatloaf from the oven and let it cool for 10 minutes.
Slice into 6 equal pieces. Garnish with fresh parsley and serve.
