Ingredients for baked cod with Ritz Crackers

To make this crispy baked cod recipe, you will need the following ingredients:

  • 10 ounces of cod fillets – 2 pieces
  • Sea salt and cracked black pepper
  • 18 Ritz Crackers
  • 3 tablespoons of unsalted butter
  • ½ teaspoon of garlic powder
  • ½ teaspoon of smoked paprika
  • 1 ½ tablespoons of fresh Parmesan cheese
  • 3 tablespoons of butter
  • Fresh lemon rind
  • Parsley to garnish
  • Lemon slices to garnish

Making the crispy baked cod recipe

Preheat the oven to 375°F (190°C).

Pat the cod dry with a paper towel. This step is important, especially if you use frozen cod. Patting the fish dry will remove any water stored during freezing and will improve the texture of the cod.

Season the fish with sea salt and cracked black pepper. Place the cod in an ovenproof casserole dish.

How to make the Ritz Cracker topping

Place the Ritz Crackers in a sealed ziplock bag, and use a heavy rolling pin to press down on the crackers. After just a couple of passes of the rolling pin, you’ll have a bag full of Ritz Cracker crumbs.

Place the crumbs in a bowl, and add the butter. Heat the butter and crumbs in the microwave for about 40 seconds, just long enough to melt the butter.

Stir well to combine and add the Parmesan cheese, paprika, and garlic powder.

Use a microplane to grate the rind of a washed lemon into the bowl.

Mix the ingredients until everything is well combined.

Spoon the Ritz Cracker topping over the cod fillets. Bake in the preheated oven for 13-16 minutes until the fish flakes easily and is cooked through.
