Instructions for making the chocolate peanut butter brownies recipe
Start by preheating the oven to 350ºF (180ºC). Line a 9 x 9-inch baking pan with parchment paper and set it aside.
In a medium bowl, whisk together the all-purpose flour, baking powder, and sea salt.
Put a small saucepan over medium-low heat and add ½ cup (1 stick) of butter, ¾ cup of semi-sweet chocolate chips, 1 tablespoon of 2% milk, and the cocoa. Gently cook, stirring the whole time, until the mixture is smooth and thick – about 3 minutes.
Be careful not to let the chocolate mixture burn.
Remove the saucepan from the heat and stir in the granulated sugar. Stir for about 30 seconds. The mixture will look a little grainy at this point.
Add the eggs, 1 at a time, and mix well. Then stir in the pure vanilla extract. The mixture will resemble fudge at this stage.
Gently add the combined flour, salt, and baking powder until it is incorporated.
Fold in the Reese’s peanut butter morsels. Stir until everything is combined and the mixture is thick and fudgy.
Spread the mixture into the prepared baking pan and bake for 20-25 minutes or until a toothpick inserted in the middle of the brownies comes out clean.
Remove the pan of brownies from the oven and let them cool.
How to make frosting for brownies
To make the peanut butter frosting, add 3 tablespoons of butter, the peanut butter, ½ teaspoon of pure vanilla extract, and the confectioner’s sugar to a bowl. Beat with a hand mixer until a thick paste forms – about 2 minutes.
Stir in the milk, and beat until the frosting is very smooth – 1 more minute.
Spread the peanut butter frosting over the cooled brownies.
Making the chocolate drizzle
To make the drizzle, place 2 tablespoons of semi-sweet chocolate chips and ¼ teaspoon of coconut oil in a small microwave-safe bowl.
Heat on 50% power in 20-second increments until the chocolate has melted – about 1 – 2 minutes.
Add the melted chocolate to a piping bag and snip the end of the bag.
Drizzle the chocolate over the top of the peanut butter frosted brownies. This gives the brownies a look that is fancy enough for a special dinner party.
Cut the peanut butter frosted brownies into 12 squares. Then place 2 pieces of the chopped peanut butter cups on top of each brownie.
Store the Reese’s peanut butter cup brownies in an air-tight container for up to a week.
