These roasted herb potatoes have a crisp outer coating but the center is soft and moist. They make the perfect side dish for any protein choice.

4 cups cubed potatoes
2-3 tbsp. mixed fresh chopped herbs (rosemary, oregano and thyme are my choices)
3 tbsp. olive oil
1 tbsp. garlic salt
1 tsp. seasoned salt
2 tsp. paprika
1 tsp. ground black pepper
4 tbsp. finely grated Parmesan cheese
