Greek Omelette with Artichokes and Feta Cheese

Today’s breakfast recipe has a Mediterranean flair to it.  The artichokes and feta cheese remind me of my favorite antipasto platter.  This Greek omelette is loaded with flavor and very easy to make.Greek Omelette with Artichokes and Feta Cheese

To make the Greek omelette you will need these Ingredients

1 egg
2 egg whites
1 tbsp of heavy cream
Salt and pepper to taste
1 tbsp spring onions, chopped
1/4 cup of diced red peppers
1/2 tsp fresh oregano
1/2 cup of baby spinach leaves
2 tbsp of feta cheese
3 canned artichoke hearts, diced
2 tsp olive oil
