This pumpkin spice oatmeal recipe is super fast and easy. It is healthy and satisfying and comes together in just minutes.

Ingredients
  • 1 cup old-fashioned gluten free rolled oats
  • 2 cups skim milk
  • ¼ cup pumpkin puree
  • ½ tsp pure vanilla extract
  • ½ tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • pinch of sea salt
  • 2 tbsp maple syrup
  • Garnish
  • ½ cup chopped pecans
  • ¼ cup pure maple syrup
  • Enjoy Life mini chocolate chips
  • Sunflower seeds or pumpkin seeds
Instructions
  1. Combine the rolled oats and skim milk in a small saucepan over medium heat.
  2. Bring the mixture to a boil; then reduce the heat and simmer, stirring occasionally, until it gets to your desired consistency, about 3-5 minutes. Stir in the pumpkin puree, vanilla extract, cinnamon, sea salt and nutmeg until the mixture is heated through, about 1 minute more. Add 2 tbsp of maple syrup and stir well.
  3. Serve immediately, garnished with chopped pecans, Enjoy Life chocolate chips, a few pumpkin seeds, and extra maple syrup.
