Mozzarella Chicken Recipe – Easy Honey Mozzarella Chicken Thighs

This recipe for mozzarella chicken uses tender dark meat chicken thighs with a delicious topping of bacon, honey mustard and mozzarella cheese. It is an easy meal that is ready in about 45 minutes.  It’s a perfect chicken recipe for a busy week night and special enough to serve for guests.

This recipe is fast and easy to do, yet it’s just bursting with flavor.  I used chicken thighs because they are so flavorful but the recipe also works for chicken breasts (and is even a bit faster!)

This mozzarella chicken has a delicious honey mustard and bacon topping.

I love cooking with mozzarella cheese. It’s a lighter type of cheese than cheddar and turns semi soft in the oven instead of hard. Add in the bacon, honey mustard and lemon zest and you have the perfect topping for juicy chicken thighs.Bacon, mozzarella cheese, honey and mustard

Chicken thighs are my favorite cut of chicken to use when I bake.  I love the skinless thighs that still have the bone in. This makes for a very juicy piece of chicken after they are cooked and the flavor is rich and dark.  They always come out very tender and juicy. Making Honey Mustard Mozzarella Chicken Thighs

Start by placing the chicken thigh pieces in an ovenproof baking dish and set aside. Mine had skin and bone, but I removed the skin of my chicken and left the bone in.chicken thighs in a baking dish with skin removed

Combine the honey, Dijon mustard, lemon zest, sea salt and black pepper in a bowl until it is well combined.   Zesting lemons is very easy with a microplane and really adds so much to the taste of the marinade.honey mustard sauce

Spoon the marinade over the chicken pieces.  I coated one side and then flipped them and brushed on the other with a silicone pastry brush. How is that for easy?honey mustard sauce on chicken

Bake the chicken thighs for about 35 -40 minutes. Then remove the chicken and turn the oven on to broil while you make the delicious bacon and cheese topping.Cooked chicken

Each chicken thigh piece gets 2 bacon slice halves, and then mozzarella cheese is sprinkled over the top. Cheese and bacon on chicken

Broil the thighs for an additional 5 minutes, until the bacon is slightly crisp, and the cheese is bubbly and browned.  Can’t wait to dig into them!

Ingredients
  • 6 chicken thighs, skin removed
  • ½ cup of honey
  • ½ cup Dijon mustard
  • zest of 1 lemon
  • sea salt and cracked black pepper to taste
  • 6 slices bacon, cut in half
  • 1⅓ cup shredded mozzarella cheese
Instructions
  1. Preheat the oven to 375º F
  2. Place the chicken thigh pieces in an ovenproof baking dish.
  3. Combine the honey, Dijon mustard, lemon zest, salt and black pepper in a bowl and spoon the mixture over the chicken pieces.
  4. Bake the chicken thighs for 35 - 40 minutes. Remove the chicken and turn the oven on to broil while you make the topping.
  5. Place 2 bacon slice halves on each chicken thigh, and sprinkle evenly with mozzarella cheese. Broil for 5 minutes, until the bacon is slightly crisp, and the cheese is bubbly and browned.
