To make this easy fruit salad recipe, you’ll need these ingredients:

For the salad
- 1 cup of cubed cantaloupe melon
- 1 cup of cubed honeydew melon
- 1 cup of cubed watermelon
- 1 cup of cubed English cucumber
For the dressing
- 2 tablespoons of lime juice (about 1 lime)
- 1 tablespoon of honey
- ½ teaspoon of sea salt
- ½ teaspoon of cracked black pepper
- ¼ cup of chopped fresh mint plus extra to garnish

Cut the melons
There is a saying that we eat with our eyes. I love the colors that go into this salad!
- Start by cubing the melon and cucumbers into even-sized pieces.
- It makes it easier to eat and gives the salad a uniform look.
- Set these bowls aside.

Making the honey lime dressing
- Chop the fresh mint. Herb scissors make this job super easy!
- Mix the honey and lime juice.
- Add the sea salt and cracked black pepper to taste.
- Add the fresh mint and mix well.
Add the dressing

Using fresh herbs for cooking recipes adds so much flavor as well as lovely garnishes. The fresh mint is one of the stars of this dish.
- Pour the dressing over the cubed melons and cucumber.
- Toss the ingredients until well-incorporated.
- Place in the fridge until you are ready to serve.

Melon Cucumber Salad with Honey-Lime Dressing
This cucumber melon salad is light and refreshing. It has a tasty homemade honey lime dressing and makes the perfect side dish for summer barbecues.
Ingredients
For the salad
- 1 cup of cubed cantaloupe melon
- 1 cup of cubed honeydew melon
- 1 cup of cubed watermelon
- 1 cup of cubed English cucumber
For the dressing
- 2 tablespoons of lime juice (about 1 lime)
- 1 tablespoon of honey
- ½ teaspoon of sea salt

Instructions
- Start by cutting your melons and cucumbers into cubes, all about the same size.
