This delicious cucumber melon salad is my latest addition to my salad recipe collection and my family just loves it.
When summer hits and the temperatures rise, the last thing I want to be doing is cooking in a hot kitchen. For me, summertime means lots of different salads.
They are refreshing and light and make use of the plentiful fruits and veggies that are in season in the summer.

When the heat of summer is upon us, this cucumber melon salad is the perfect mealtime addition.
My husband loves all kinds of melons, so I thought it would be a fun idea to combine them all into one delicious salad, and then top the whole thing with honey, fresh mint, and lime juice.
Start by gathering all your ingredients:
- cantaloupe
- honeydew melon
- English cucumber
- watermelon
- honey
- pink sea salt
- cracked black pepper
- juice of one lime
- fresh mint
The trick for getting this salad to taste good and look great is to start by cubing the melon and cucumbers into even-sized pieces. This makes it much easier to eat and gives the salad a uniform look.
I love the colors that will go into it!
Using fresh herbs for cooking recipes adds so much flavor as well as lovely garnishes. The fresh mint is one of the stars of this dish.
The dressing is so easy. I just mixed the honey, juice of one lime and some sea salt and cracked black pepper and then added a bunch of fresh chopped mint.

Snip, snip, snip and it’s done. Some kitchen gadgets are just worth having!
The melon and cucumber get combined in a large bowl and then I mixed in the dressing and gave it a good toss. The last step was to add the mint to the salad.
Easy peasy. This is such a fast and simple recipe, but it is SO FULL OF FLAVOR!
This makes the perfect side dish for any grilled meat on the BBQ. It is very light and delicate. The mint adds a bite to it and the honey and lime combine to add just a touch of sour-sweetness.
I just love the colors in this salad! They do say that you must feed your eyes first!

Cucumber Melon Salad - Refreshing Summer Treat
This cucumber melon salad is light and refreshing. It's the perfect side dish for summer barbecues.
Ingredients
- 1 cup of cubed cantaloupe melon
- 1 cup of cubed watermelon
- 1 cup of cubed honeydew melon
- 1 cup of cubed English cucumber
- 1/4 cup of chopped fresh mint
- 2 tablespoons of lime juice (about 1 lime)
- 1 tablespoon of honey
- 1/2 teaspoon of sea salt
- 1/2 teaspoon of cracked black pepper
Instructions
- Start by cutting your melons and cucumbers into cubes, all about the same size.
- Place them in a large bowl and set aside.
- Combine the honey, lime juice, sea salt, and cracked black pepper in a small bowl. Whisk well.
- Pour the dressing over the melon mixture and stir to combine. Add the fresh chopped mint and mix thoroughly.
- Store in the fridge and serve cold.
