Cheese Stuffed Chicken Wrapped in Bacon – Chicken and Peppers

This recipe for cheese stuffed chicken wrapped in bacon is one that will be sure to become a family favorite.

Everything goes better with bacon is a saying most cooks have heard at some point (and probably agree with!) This recipe proves that saying, for sure! There is even a foodie national day that honors bacon. Bacon day is celebrated on December 30 each year.

The cheddar cheese and pepper filling is creamy and delicious and is a great way to use your harvest of garden bell peppers.

Considering how fancy this recipe turns out, it could not be easier to put together. All I did was to butterfly the chicken breasts, season them, layer the peppers and cheese and wrapped them in bacon.

I used sweet yellow peppers but any bell peppers will do. (Or if you love spice, you could even use chili peppers.)

I did not even toothpicks to secure the chicken, and it took just a few minutes to prepare them. What could be better for a busy cook?

The bacon wrapped chicken pieces are cooked in the oven and then the bacon is crisped under the broiler for the last couple of minutes to add some extra texture.

I cooked mine for about 30 minutes.

Cheese Stuffed Chicken Wrapped in Bacon

Cheddar and pepper stuffed bacon wrapped chicken breasts

These delicious chicken breasts are filled with gooey cheddar cheese and sweet peppers, then wrapped in bacon. The dish is easy to make but elegant enough for a dinner party.

Prep Time 10 minutes
Cook Time 35 minutes
Total Time 45 minutes

Ingredients

  • 3 boneless, skinless chicken breasts
  • 3 slices extra sharp cheddar cheese
  • Kosher salt and cracked black pepper
  • 1 sweet orange pepper
  • 9 slices of bacon

Instructions

  • Preheat the oven to 350º F. Butterfly the chicken breasts by carefully cutting them open with a very sharp long thin knife. Don't cut all the way through. Leave a pocket for the fillings.
  • Season the inside of the chicken with the salt and pepper.
  • Cut the cheese slices in half so you can lay them inside chicken and not overhang.
  • Cut the pepper into long strips that lay flat.
  • Lay the pepper slices and top with cheese on the pocket in the chicken, then fold the chicken back up.
  • Carefully wrap chicken with bacon. I did not need to use toothpicks. My bacon gripped the chicken very well.
  • Bake in the preheated oven for 30 minutes until the chicken is done and no longer pink inside. A Meat thermometer will help.
  • When chicken is cooked thoroughly, place the oven pan under the broiler and crisp the bacon for about 2 minutes.
  • Served with a side salad. Enjoy!
